Prepare the Chicken
- In a mixing bowl, combine chicken fillets, salt, pepper, red smoked pepper, Cajun seasoning, and garlic powder.
- Heat oil in a pan over medium heat and cook the chicken for 12-15 minutes, flipping occasionally, until fully cooked through.
- Once cooked, remove the chicken from the pan and set aside to rest.
Prepare the Dressing
- In a small bowl, whisk together mayonnaise,
- Dijon mustard, red hot sauce, smoked paprika,
- Cajun seasoning, Italian seasoning, salt, pepper, and garlic powder until well combined. Set aside.
Assemble the Sandwiches
- Toast the slices of bread until golden brown.
- On three slices of the toasted bread, layer the following ingredients in this order: lettuce, tomato, cucumber, onion, roasted red peppers, cheddar cheese, and the cooked Cajun chicken.
- Season the veggies with a pinch of salt. Spread the dressing generously on the remaining bread slices, and place on top of each sandwich to complete.
