Marinate the Chicken
- In a mixing bowl, combine the cubed chicken with salt, black pepper, garlic powder, red chili powder, smoked paprika, and coriander powder.
- Add mayonnaise, oil, and freshly squeezed lemon juice.
- Mix thoroughly to coat the chicken.
- Cover and marinate in the refrigerator for at least 2 hours (or overnight for deeper flavor).
Cook the Chicken
- Heat 1 tbsp clarified butter (ghee) in a non-stick skillet over medium heat.
- Add half the chicken, spacing pieces out to avoid overcrowding. Cook for 3–4 minutes, stirring occasionally until lightly browned.
- Cover and cook for another 4–5 minutes, or until chicken is fully cooked through and juicy.
- Repeat with the remaining chicken and another tablespoon of ghee.
- Set aside.
Make the Spicy Garlic Yogurt Sauce
- In a bowl, whisk together mayonnaise, sour cream, garlic powder, paprika, salt, black pepper, hot sauce, and lemon juice.
- Stir in chopped parsley.
- If desired, add buttermilk 1 tablespoon at a time to reach your preferred consistency.
- Taste and adjust seasoning/spice level.
Assemble the Wraps
- Warm tortillas in a dry pan or skillet for 1–2 minutes per side
- Layer each wrap with lettuce, cooked chicken, tomatoes, and onions
- Drizzle generously with the spicy garlic yogurt sauce
- Fold the sides and roll tightly into a wrap
- Serve immediately for best taste and texture
