Ingredients
 
 

For the Chicken Marinade:
  • 1 lb boneless chicken breast, cut into small cubes
  • 1 tbsp smoked paprika
  • 1/2 tsp red chili powder adjust to taste
  • 1 tbsp garlic powder
  • 1 tsp coriander powder
  • 1/2 tsp black pepper
  • Salt to taste
  • 2 tbsp mayonnaise
  • 2 tbsp oil vegetable or olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 2 tbsp clarified butter ghee, for cooking
For the Fresh Veggies:
  • 1 small red onion diced and rinsed (to reduce sharpness)
  • 1 cup fresh lettuce chopped (romaine or iceberg)
  • 2 Roma tomatoes seeded and chopped
For the Spicy Garlic Yogurt Sauce:
  • 1/2 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • Salt to taste
  • 2-3 tbsp hot sauce adjust to spice preference
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp freshly chopped parsley
  • 3-4 tbsp buttermilk optional, for thinner consistency
For Assembling:
  • 3 large tortilla wraps flour wraps work best

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine the cubed chicken with salt, black pepper, garlic powder, red chili powder, smoked paprika, and coriander powder.
  2. Add mayonnaise, oil, and freshly squeezed lemon juice.
  3. Mix thoroughly to coat the chicken.
  4. Cover and marinate in the refrigerator for at least 2 hours (or overnight for deeper flavor).
Cook the Chicken
  1. Heat 1 tbsp clarified butter (ghee) in a non-stick skillet over medium heat.
  2. Add half the chicken, spacing pieces out to avoid overcrowding. Cook for 3–4 minutes, stirring occasionally until lightly browned.
  3. Cover and cook for another 4–5 minutes, or until chicken is fully cooked through and juicy.
  4. Repeat with the remaining chicken and another tablespoon of ghee.
  5. Set aside.
Make the Spicy Garlic Yogurt Sauce
  1. In a bowl, whisk together mayonnaise, sour cream, garlic powder, paprika, salt, black pepper, hot sauce, and lemon juice.
  2. Stir in chopped parsley.
  3. If desired, add buttermilk 1 tablespoon at a time to reach your preferred consistency.
  4. Taste and adjust seasoning/spice level.
Assemble the Wraps
  1. Warm tortillas in a dry pan or skillet for 1–2 minutes per side
  2. Layer each wrap with lettuce, cooked chicken, tomatoes, and onions
  3. Drizzle generously with the spicy garlic yogurt sauce
  4. Fold the sides and roll tightly into a wrap
  5. Serve immediately for best taste and texture
