Ingredients
 
 

For the Fajita Seasoning:
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tsp paprika powder
  • 1/2 tsp red chili powder (adjust to desired spice level)
  • 1 tbsp freshly minced garlic
  • 1 tsp cumin powder
  • Salt, to taste
  • 1 tsp black pepper powder
For the Chicken:
  • 2 lbs boneless chicken thighs or breasts, cut into long strips
  • 1 tbsp lemon juice
  • 2 tbsp prepared fajita seasoning (from above)
  • 2 tbsp oil (plus more for cooking)
For the Vegetables:
  • 1 cup mixed bell peppers, cut into long strips
  • 1 onion, thinly sliced
  • 1 tbsp garlic powder
  • Salt, to taste
For the Creamy Fajita Sauce:
  • 6 tbsp sour cream
  • 2 tbsp mayonnaise
  • 2 tbsp prepared fajita seasoning (adjust according to taste)
  • 1 tbsp lemon juice
  • 3/4 tbsp water (to thin out the sauce)
For Assembly:
  • 10-12 tortilla wraps
  • 1 cup mixed cheese blend (shredded)

Method
 

Prepare the Fajita Seasoning:
  1. In a small bowl, combine the garlic powder, onion powder, paprika, red chili powder, minced garlic, cumin, salt, and black pepper.
  2. Mix well and set aside.
Marinate the Chicken:
  1. In a large bowl, place the chicken strips.
  2. Add the lemon juice, 2tbsp of the prepared fajita seasoning, and 2 tbsp of oil. Toss to coat the chicken evenly.
  3. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
Cook the Chicken:
  1. Heat a large skillet or griddle over medium-high heat.
  2. Remove the marinated chicken from the fridge and cook the chicken strips for 5-6 minutes per side, or until fully cooked through and golden brown.
  3. Transfer the cooked chicken to a plate and cover with foil to keep warm.
Prepare the Vegetables:
  1. In the same skillet, add a bit more oil if necessary.
  2. Add the mixed bell peppers and onion to the skillet.
  3. Cook for about 5minutes, or until the vegetables are tender.
  4. Sprinkle with garlic powder and season with salt to taste.
  5. Remove from heat and set aside.
Make the Creamy Fajita Sauce:
  1. In a bowl, whisk together the sour cream, mayonnaise, 1-2 tsp of fajita seasoning, lemon juice, and water.
  2. Mix until smooth, adjusting the seasoning and consistency as needed.
  3. Add more water for a thinner sauce if desired.
Assemble the Fajita Wraps:
  1. Lay a tortilla wrap on a flat surface.
  2. Add a generous amount of cooked chicken, vegetables, and a spoonful of the creamy fajita sauce.
  3. Sprinkle with the mixed cheese blend.
Cook the Wraps:
  1. Fold the bottom half of the tortilla up, then fold in the side sand roll tightly to form a wrap.
  2. Place the wrapped fajita, seam-side down, on a warm skillet.
  3. Drizzle with a little oil and cook for 2-3 minutes per side on low heat, or until the tortilla is golden and crispy.
Serve:
  1. Remove from the skillet and serve immediately.
  2. Enjoy the delicious, flavorful Chicken Fajita Wrap with a creamy, tangy sauce.
