These Chicken Caesar Smash Tacos combine the crispiness of smashed, seasoned ground chicken with the classic flavors of Caesar salad, all wrapped up in warm, crunchy mini tortillas. Ingredients
 
 

For the Chicken and Tacos:
  • 2 lbs minced chicken
  • 10 mini tortillas
  • Salt and pepper to taste
  • Oil for cooking
Caesar Dressing:
  • 1 cup mayonnaise
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tsp lemon juice
  • 2-3 cloves garlic freshly minced
  • Salt to taste
  • 3 tbsp olive oil
  • 1 tsp black pepper
Caesar Salad Topping:
  • 1 large romaine lettuce diced
  • 1/3 cup parmesan cheese shredded or shaved
  • 1 cup croutons

Method
 

Prepare the Chicken:
  1. Divide the minced chicken into 10 equal portions.
  2. Place 2-3 tablespoons of chicken in the center of each tortilla, pressing gently to flatten evenly. Season with salt and pepper.
Cook the Tacos:
  1. Heat a skillet over medium-high heat with a small amount of oil.
  2. Place tortillas meat-side down and cook over medium-low heat for 2-3 minutes, until chicken is cooked through.
  3. Flip and cook the other side until tortillas are crispy and golden brown.
Make the Caesar Dressing:
  1. In a bowl, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, garlic, salt, and pepper.
  2. Slowly drizzle in olive oil while whisking until smooth and emulsified.
Assemble the Tacos:
  1. Top each cooked taco with diced romaine lettuce, shaved parmesan, and croutons.
  2. Drizzle generously with Caesar dressing.
Serve:
  1. Serve immediately while tacos are warm and crispy.
