Ingredients
 
 

For the Chicken:
  • 1 lb boneless chicken breast fillets
  • Salt and pepper, to taste
  • 1 tsp red smoked pepper
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Oil, for cooking
For the Sandwich:
  • 9 slices of bread
  • 1 onion, sliced into rings
  • 1 large cucumber, thinly sliced
  • 8-9 lettuce leaves
  • 1/2 cup roasted red peppers
  • 3-4 slices of cheddar cheese
  • 2 large tomatoes, thinly sliced
For the Dressing:
  • 1 cup mayonnaise
  • 2 tsp Dijon mustard
  • 1 tbsp red hot sauce
  • 1 tsp smoked paprika
  • 1 tbsp Cajun seasoning
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 tsp garlic powder

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine chicken fillets, salt, pepper, red smoked pepper, Cajun seasoning, and garlic powder.
  2. Heat oil in a pan over medium heat and cook the chicken for 12-15 minutes, flipping occasionally, until fully cooked through.
  3. Once cooked, remove the chicken from the pan and set aside to rest.
Prepare the Dressing
  1. In a small bowl, whisk together mayonnaise,
  2. Dijon mustard, red hot sauce, smoked paprika,
  3. Cajun seasoning, Italian seasoning, salt, pepper, and garlic powder until well combined. Set aside.
Assemble the Sandwiches
  1. Toast the slices of bread until golden brown.
  2. On three slices of the toasted bread, layer the following ingredients in this order: lettuce, tomato, cucumber, onion, roasted red peppers, cheddar cheese, and the cooked Cajun chicken.
  3. Season the veggies with a pinch of salt. Spread the dressing generously on the remaining bread slices, and place on top of each sandwich to complete.
Serve
  1. Cut the sandwiches in half and serve immediately, enjoying the crispy, flavorful layers of the Cajun Chicken Club!

  • For an extra kick, you can add more hot sauce to the dressing.
  • Feel free to swap out the cheddar for another cheese like Swiss or provolone for different flavors.
  • If you prefer grilled chicken, you can grill the chicken fillets instead of pan-frying them.
