Ingredients
 
 

For the Chicken:
  • 1 lb boneless chicken breast, sliced
  • 1 tbsp corn flour
  • 1 tsp baking powder
  • 1 tbsp soy sauce
  • Salt to taste
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp red chili flakes
  • Oil for cooking
For the Veggies:
  • 1 cup mixed bell peppers, sliced
  • 1/2 cup cabbage, sliced
  • 3 tbsp fresh garlic, finely chopped
  • 2 mushrooms, sliced
  • 1/2 red onion, sliced
  • 1/2 cup green onion, diced
  • 1/2 cup carrots, sliced
  • Salt to taste
  • 1 tsp black peppe
For the Sauce:
  • 2 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp oyster sauce
  • 2-3 tbsp sweet and sour sauce
  • 1 chicken bouillon cube, crushed
  • Salt to taste
  • 1 tsp black pepper
  • 1 tbsp brown sugar
  • 1 tbsp garlic powder
To Assemble:
  • 220 g egg noodles
  • 1 tbsp sambal oelek or chili sauce
  • 2 tbsp sesame seed oil
  • 1 cup green onion, sliced
  • White sesame seeds

Method
 

Marinate the Chicken
  1. In a bowl, combine corn flour, baking powder, salt, garlic powder, black pepper, and chili flakes.
  2. Add the chicken slices, mix thoroughly, and allow to marinate for 30minutes.
Cook the Chicken
  1. Heat oil in a wok over medium-high heat.
  2. Cook the marinated chicken in batches for 5 to 6 minutes, or until it is browned and fully cooked. Set the chicken aside.
Prepare the Vegetables
  1. In the same wok, add oil if necessary.
  2. Sauté garlic and sambal oelek for 1 minute.
  3. Next, add the green onions, bell peppers, mushrooms, red onion, and carrots, cooking until the vegetables are tender-crisp.
  4. Incorporate the cabbage and cook for an additional minute. Season with salt and black pepper to taste.
Make the Sauce
  1. In a separate bowl, whisk together soy sauces, rice vinegar, oyster sauce, sweet and sour sauce, a chicken bouillon cube, brown sugar, garlic powder, and black pepper.
Cook the Noodles:
  1. Prepare the egg noodles according to the package instructions.
Combine Ingredients:
  1. Begin by adding the cooked noodles to the wok with the sautéed vegetables.
  2. Next, pour the sauce over the mixture and stir thoroughly to ensure even distribution. Incorporate the cooked chicken, season with salt to taste, and drizzle with sesame oil.
  3. Finally, garnish the dish with sliced green onions and a sprinkle of white sesame seeds.
  4. Enjoy your homemade Chicken Chow Mein!

Noodle Variations:
  • If you prefer, you can substitute the egg noodles with other types of noodles, such as rice noodles or chow mein noodles.
  • Just ensure they are cooked according to the package instructions.
Chicken Substitute:
  • You can swap out chicken breast for chicken thighs if you prefer a richer flavor.
  • Thighs will also remain more tender and juicy during the stir-frying process.
Vegetable Variations:
  • Feel free to customize the vegetables based on what you have on hand or your preferences.
  • Bok choy, baby corn, snap peas, or bean sprouts would make excellent additions to this dish.
