Notes
Noodle Variations:
- If you prefer, you can substitute the egg noodles with other types of noodles, such as rice noodles or chow mein noodles.
- Just ensure they are cooked according to the package instructions.
- You can swap out chicken breast for chicken thighs if you prefer a richer flavor.
- Thighs will also remain more tender and juicy during the stir-frying process.
- Feel free to customize the vegetables based on what you have on hand or your preferences.
- Bok choy, baby corn, snap peas, or bean sprouts would make excellent additions to this dish.
- The sambal oelek or chili sauce adds a nice kick to the dish, but you can adjust the spice level based on your preference.
- For a milder version, use less chili sauce, or substitute with a mild chilipaste.
- If you're meal prepping, you can prepare the chicken, vegetables, and sauce ahead of time.
- Store everything separately in the fridge and assemble the dish when ready to cook.
- If you like a bit of crunch, you can add a handful of roasted peanuts or cashews just before serving.
- They add a nice texture contrast to the tender noodles and vegetables.
