Method
Marinate and Cook the Chicken:
- In a large bowl, combine the chicken, salt, black pepper, garlic powder, smoked paprika, cumin, red pepper paste (or tomato paste with chili flakes), olive oil, sliced white onion, and minced garlic. Mix well to coat the chicken evenly.
- Cover and marinate for at least 30 minutes (or up to 4 hours in the refrigerator for deeper flavor).
- Heat a large skillet or pan over medium-high heat. Add a small drizzle of oil if needed.
- Add the marinated chicken and cook for 8–10 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Set aside.
Prepare the Creamy Garlic Yogurt Sauce:
- In a bowl, whisk together the yogurt, mayonnaise, sour cream, lemon juice, minced garlic, garlic powder, black pepper, and salt.
- Taste and adjust seasoning as needed. Cover and refrigerate until ready to use.
Make the Sumac Onions:
- In a mixing bowl, combine the red onion, parsley, sumac, lemon juice, and a pinch of salt.
- Toss well to coat. Let sit for 10 minutes to allow flavors to blend.
Assemble the Wraps:
- Lay out the pita bread or flatbreads. On each, layer chopped lettuce, sliced tomato, cooked chicken, pickled cucumbers, and sumac onions.
- Drizzle generously with the creamy garlic yogurt sauce.
- For an extra touch, place the wrap seam-side down in a dry skillet over medium-low heat for 1–2 minutes per side to warm and slightly crisp the bread.
Serve:
