Step 1: Prepare Taco Seasoning
- In a small bowl, combine salt, black pepper, smoked paprika, garlic powder, onion powder, ground cumin, red chili powder, and dried oregano.
- Mix well and set aside.
Step 2: Cook the Beef
- Heat clarified butter or oil in a pan over medium heat.
- Add diced onions and sauté until fragrant, about 1 minute.
- Add ground beef and cook, breaking it apart, until it changes color.
- Stir in minced garlic and cook for 30 seconds.
- Add 1 tbsp taco seasoning and tomato paste.
- Mix well and sauté for 2–3 minutes to develop flavor.
- Pour in warm water and cook for 8–10 minutes, stirring occasionally, until beef is fully cooked and water has evaporated. Adjust salt if needed.
Step 3: Make the Salsa
- In a bowl, combine finely chopped onions, diced tomatoes, chopped cilantro, lime juice, salt, and black pepper.
- Mix well and set aside.
Step 4: Prepare Taco Sauce
- In a separate bowl, whisk together sour cream, mayonnaise, buttermilk (or water), lime juice, taco seasoning, and dried parsley until smooth and creamy.
Step 5: Assemble and Cook Tacos
- Heat a thin layer of oil in a pan over medium heat.
- Place a mini tortilla in the pan, sprinkle shredded mozzarella cheese on one half, then spoon a generous amount of cooked beef over the cheese.
- Fold the tortilla in half over the filling.
- Cook until the bottom is crispy and golden, then flip and cook the other side until crispy and the cheese is melted.
Step 6: Serve
- Serve the crispy beef tacos warm, accompanied by fresh salsa and creamy taco sauce.
Notes
- Adjust the level of spice in the taco seasoning according to your preference.
- For extra crunch, lightly fry the tortillas before adding filling.
- Use clarified butter or oil with a high smoke point to avoid burning during frying.
- Leftover beef can be refrigerated and used for other Mexican dishes like burritos or nachos.
