Brookie Cookies (Brownie + Chocolate Chip Cookie)

Ingredients
 
 

Brownie layer:
  • 6 tbsp unsalted butter
  • 1/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 3/4 cup all purpose flour
  • 1 tsp baking powder
  • 4 tbsp unsweetened cocoa powder
  • 2 large eggs room temperature
  • 1/4 cup semi sweet chocolate chips
  • 3/4 cup milk chocolate chips
  • 1 tbsp vanilla bean paste
  • 2 tbsp neutral oil
  • Pinch of salt
Cookie layer:
  • 1 1/4 cups all purpose flour
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 tbsp vanilla bean paste
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1 cup semi sweet chocolate chips
  • 1 large egg room temperature

Method
 

  1. Preheat oven to 350°F (180°C). Line a baking dish or sheet with parchment paper.
  2. Brownie layer: Combine flour, baking powder, and salt. Set aside.
  3. Brown butter over medium-low heat until golden and nutty (~6-8 minutes). Transfer to heatproof bowl.
  4. Stir in cocoa powder, oil, vanilla, and semi sweet chocolate chips. Cool completely.
  5. Whisk eggs and light brown sugar 5-6 minutes until dissolved, add granulated sugar and whisk 2-3 minutes more.
  6. Mix in cooled brown butter mixture.
  7. Fold in dry ingredients and milk chocolate chips until just combined.
  8. Cookie layer: Combine flour, baking soda, and salt.
  9. Mix melted butter, brown sugar, and granulated sugar 2-3 minutes.
  10. Add egg and vanilla, whisk until pale.
  11. Fold in dry ingredients and semi sweet chocolate chips.
  12. Using an ice cream scoop, layer cookie batter and brownie batter alternately in swirls.
  13. Place scoops on baking sheet 2-3 inches apart (max 4 per sheet).
  14. Bake 11-12 minutes until edges set and centers soft.
  15. Cool completely before serving.

Notes

Tips
  • Browning butter adds deep flavor; stir constantly!
  • Mix eggs and sugar thoroughly for crackly brownie tops.
  • Avoid overmixing to keep texture tender.
  • Let cool fully for best slicing and serving.
