A classic Italian dessert, Tiramisu is a layered combination of creamy mascarpone cheese, coffee-soaked ladyfingers, and a dusting of cocoa powder. Perfect for special occasions or a sweet treat, this indulgent dessert is sure to impress!

Ingredients
 
 

  • 5 large egg yolks
  • 2-1/4 cups mascarpone cheese
  • Pinch of salt
  • 1-1/2 cups heavy cream
  • 1 tbsp vanilla bean paste
  • 1/3 cup + 2 tbsp granulated sugar
  • 30-40 ladyfingers
  • 2 cups strong brewed coffee or espresso
  • 2 tbsp sugar
  • Cocoa powder for dusting

Method
 

Brew Coffee:
  1. Brew 1 cup of strong coffee or espresso and let it cool to room temperature.
Prepare Egg Mixture:
  1. In a heatproof bowl, whisk together the egg yolks, vanilla bean paste, 1/3 cup of granulated sugar, and a pinch of salt.
  2. Place the bowl over a saucepan of simmering water (ensure the bowl does not touch the water).
  3. Whisk constantly for 10-12 minutes, or until the mixture becomes pale and thick.
Cool the Egg Mixture:
  1. Remove the bowl from the heat and allow the egg yolk mixture to cool to room temperature.
Add Mascarpone:
  1. Once the egg mixture has cooled, add the mascarpone cheese and whisk using an electric mixer for 2 minutes, or until smooth and well combined.
Whip the Cream:
  1. In a separate bowl, whip the heavy cream and remaining 2 tablespoons of sugar until stiff peaks form.
Combine Mixtures:
  1. Gently fold the whipped cream into the mascarpone-egg mixture using a spatula until just combined.
  2. Be careful not to over mix.
Soak the Ladyfingers:
  1. In a shallow dish, combine the cooled coffee with 2 tablespoons of sugar.
  2. Quickly dip each ladyfinger into the coffee mixture for 3-5seconds on each side.
  3. They should be soft and pliable, but not too soaked.
Layer the Tiramisu:
  1. Arrange a layer of the soaked ladyfingers in the bottom of a large serving dish.
  2. Trim the ladyfingers if necessary to fit the dish.
  3. Spread half of the mascarpone mixture evenly over the ladyfingers.
Repeat Layers:
  1. Add a second layer of soaked ladyfingers, followed by the remaining mascarpone mixture. Smooth the top layer.
Dust with Cocoa Powder:
  1. Use a fine mesh sieve to dust the top of the tiramisu with alight layer of cocoa powder.
Chill the Tiramisu:
  1. Cover and refrigerate the tiramisu for at least 3-4 hours or overnight to allow the flavors to meld and the dessert to set.
Serve:
  1. Slice and serve chilled for the best flavor and texture.

  • Quality Ingredients: For the best results, use high-quality mascarpone cheese and fresh ladyfingers.
  • Soaking the Ladyfingers: Don’t over-soak the ladyfingers in coffee. They should be soft but not soggy.
  • Chill Time: For optimal flavor and texture, refrigerate the tiramisu for at least 3-4 hours, or ideally overnight. This allows the flavors to develop and the dessert to firm up
