Heat Oil and Cook Garlic
- In a wide pan or skillet, add oil and cook the minced garlic until fragrant, about 1 minute.
Cook Chicken
- Add the diced chicken to the skillet and cook for1-2 minutes, until the chicken starts to change color.
- Season with 1 tablespoon of fajita seasoning.
Add Vegetables
- Add the chopped bell pepper and onion to the skillet, sautéing for an additional 30 seconds.
- Season the vegetables with 1 1/2 tablespoons of fajita seasoning mix.
Cook Pasta
- Add the uncooked penne pasta and chicken broth.
- Bring to a simmer and cook on medium heat until the pasta is al dente, about 10-12 minutes.
- Taste and adjust seasoning if needed.
Add Heavy Cream and Cheese
- Stir in the heavy whipping cream and cook for 2-3 minutes.
- Add the shredded cheddar cheese and mix well until the cheese melts and the sauce thickens.
Season and Serve
- Taste the pasta and add more fajita seasoning if desired.
- Cook for an additional 2-3 minutes to thicken the sauce.
- Garnish with freshly chopped parsley and serve warm.
Notes
- Adjust the spice level to your preference by adding more or less cayenne pepper.
- For extra flavor, consider adding diced tomatoes or jalapeños.
- If you don’t have chicken broth, substitute with 4 cups of water and 2-3 teaspoons of chicken bouillon powder.
