- In a mixing bowl, combine chicken, diced bell peppers, onion, garlic paste, salt, black pepper, garlic powder, smoked paprika, and chili powder.
- Drizzle in the oil and toss everything together until evenly coated.
- Heat a large skillet over medium-high heat. Add a bit of oil and cook the chicken mixture for about 12–15 minutes, stirring occasionally, until the chicken is fully cooked and lightly golden. Remove from heat and set aside.
Make the Sauce:
- In a small bowl, whisk together the mayonnaise, garlic powder, smoked paprika, and hot sauce until smooth. Adjust spice level to taste.
Assemble the Sliders:
- Preheat your oven to 350°F (175°C).
- Slice slider buns in half horizontally. Place the bottom halves in a greased or parchment-lined baking tray.
- Spread the garlic sauce on the bottom buns.
- Layer with half a slice of Monterey Jack cheese per bun, then spoon over a generous amount of cooked chicken filling.
- Sprinkle with shredded cheddar cheese, then place the top buns over the filling.
Bake:
- Brush the tops of the buns generously with melted butter and sprinkle with chopped parsley.
