Ingredients
 
 

For the Chicken Filling:
  • 1 lbs boneless chicken breast or thighs, cut into small cubes
  • 1 tsp salt (adjust to taste)
  • 1 tbsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp red chili powder
  • 1 tsp black pepper
  • 1 cup mixed bell peppers (red, green, yellow), diced
  • 1 medium red onion, diced
  • 1 tsp garlic paste
  • 1 tbsp neutral oil (plus more for cooking)
For the Spicy Garlic Sauce:
  • 1/2 cup mayonnaise
  • 1 tbsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp hot sauce (adjust to taste)
For Assembly:
  • 18 slider buns (or 6 full-sized buns, halved)
  • 18 slices Monterey Jack pepper cheese (or mozzarella slices)
  • 1 cup shredded cheddar cheese
For the Butter Glaze:
  • 3 tbsp unsalted butter, melted
  • 1 tbsp fresh parsley, finely chopped

Method
 

Prepare the Chicken Filling:
  1. In a mixing bowl, combine chicken, diced bell peppers, onion, garlic paste, salt, black pepper, garlic powder, smoked paprika, and chili powder.
  2. Drizzle in the oil and toss everything together until evenly coated.
  3. Heat a large skillet over medium-high heat. Add a bit of oil and cook the chicken mixture for about 12–15 minutes, stirring occasionally, until the chicken is fully cooked and lightly golden. Remove from heat and set aside.
Make the Sauce:
  1. In a small bowl, whisk together the mayonnaise, garlic powder, smoked paprika, and hot sauce until smooth. Adjust spice level to taste.
Assemble the Sliders:
  1. Preheat your oven to 350°F (175°C).
  2. Slice slider buns in half horizontally. Place the bottom halves in a greased or parchment-lined baking tray.
  3. Spread the garlic sauce on the bottom buns.
  4. Layer with half a slice of Monterey Jack cheese per bun, then spoon over a generous amount of cooked chicken filling.
  5. Sprinkle with shredded cheddar cheese, then place the top buns over the filling.
Bake:
  1. Brush the tops of the buns generously with melted butter and sprinkle with chopped parsley.
  2. Cover the tray loosely with foil and bake for 15–20 minutes, or until the cheese is melted and the buns are lightly toasted.
  3. Uncover for the last 5 minutes for an extra golden finish.

Notes

  • Make Ahead: The chicken filling and sauce can be prepared up to 2 days ahead and stored in the refrigerator.
  • Add Crunch: Top the chicken with pickled jalapeños or sliced pickles for extra texture and tang.
  • Cheese Swaps: Feel free to experiment with provolone, mozzarella
