Ingredients
Method
Brew Coffee:
- Brew 1 cup of strong coffee or espresso and let it cool to room temperature.
Prepare Egg Mixture:
- In a heatproof bowl, whisk together the egg yolks, vanilla bean paste, 1/3 cup of granulated sugar, and a pinch of salt.
- Place the bowl over a saucepan of simmering water (ensure the bowl does not touch the water).
- Whisk constantly for 10-12 minutes, or until the mixture becomes pale and thick.
Cool the Egg Mixture:
- Remove the bowl from the heat and allow the egg yolk mixture to cool to room temperature.
Add Mascarpone:
- Once the egg mixture has cooled, add the mascarpone cheese and whisk using an electric mixer for 2 minutes, or until smooth and well combined.
Whip the Cream:
- In a separate bowl, whip the heavy cream and remaining 2 tablespoons of sugar until stiff peaks form.
Combine Mixtures:
- Gently fold the whipped cream into the mascarpone-egg mixture using a spatula until just combined.
- Be careful not to over mix.
Soak the Ladyfingers:
- In a shallow dish, combine the cooled coffee with 2 tablespoons of sugar.
- Quickly dip each ladyfinger into the coffee mixture for 3-5seconds on each side.
- They should be soft and pliable, but not too soaked.
Layer the Tiramisu:
- Arrange a layer of the soaked ladyfingers in the bottom of a large serving dish.
- Trim the ladyfingers if necessary to fit the dish.
- Spread half of the mascarpone mixture evenly over the ladyfingers.
Repeat Layers:
- Add a second layer of soaked ladyfingers, followed by the remaining mascarpone mixture. Smooth the top layer.
Dust with Cocoa Powder:
- Use a fine mesh sieve to dust the top of the tiramisu with alight layer of cocoa powder.
Chill the Tiramisu:
- Cover and refrigerate the tiramisu for at least 3-4 hours or overnight to allow the flavors to meld and the dessert to set.
Serve:
- Slice and serve chilled for the best flavor and texture.
