These vibrant chicken wraps are a perfect balance of flavors and textures. Ingredients
 
 

For the Chicken:
  • 900 g boneless chicken breast or thighs, cut into slices
  • 4 tbsp whole milk yogurt
  • 2 tbsp tomato paste
  • 2 tbsp freshly squeezed lemon juice
  • Salt, to taste
  • 1 tbsp 1 tbsp black pepper
  • 1 tsp red chili powder
  • 1 tbsp tbsp garlic powder
  • 1 tbsp Cajun seasoning
  • 1 tbsp onion powder
  • 3 tbsp oil
For the Spicy Yogurt Dressing:
  • 1 cup yogurt
  • 2 tbsp mayonnaise
  • 3 tbsp hot sauce
  • Salt, to taste
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp chopped fresh parsley
For the Salad:
  • 1 red onion, diced
  • 1 large tomato, diced
  • 1 large cucumber, diced
  • Salt, to taste
  • 1 tsp black pepper
  • 1 tbsp freshly squeezed lemonjuice
For the Wraps:
  • 11 tortilla wraps
  • Lettuce, sliced

Method
 

Marinate the Chicken:
  1. In a mixing bowl, add the sliced chicken and season with salt, black pepper, red chili powder, garlic powder, Cajun seasoning, and onion powder.
  2. Add the yogurt, oil, tomato paste, and lemon juice, and mix well until the chicken is fully coated.
  3. Cover and refrigerate for at least 30 minutes to marinate.
Cook the Chicken:
  1. Heat some oil in a large skillet over medium-high heat.
  2. Remove the chicken from the marinade, letting any excess liquid drip off.
  3. Cook the chicken for 12-15 minutes, or until fully cooked through, stirring occasionally to prevent burning.
Prepare the Spicy Yogurt Dressing:
  1. In a bowl, mix together the yogurt, mayonnaise, hot sauce, salt, black pepper, garlic powder, onion powder, and chopped parsley until smooth.
  2. Adjust the level of spiciness by adding more or less hot sauce, depending on your preference.
Make the Salad:
  1. In a separate bowl, combine the diced red onion, tomato, and cucumber.
  2. Season with salt, black pepper, and freshly squeezed lemon juice, and toss to combine.
Assemble the Wraps:
  1. Warm the tortilla wraps slightly.
  2. Spread a spoonful of spicy yogurt dressing on each wrap.
  3. Add a layer of lettuce, followed by the cooked chicken, and top with the salad mixture.
  4. Drizzle with additional spicy yogurt dressing if desired.
Serve:
  1. Roll up the wraps and serve immediately. Enjoy!

Notes

  • You can adjust the spiciness of the yogurt dressing by adding more or less hot sauce to suit your taste.
  • You can also use store-bought wraps if you’re in a hurry, but homemade wraps are always a great option for extra flavor!
