Ingredients
 
 

  • 3/4 cup granulated sugar
  • 11/2 cups all-purpose flour
  • 1 tbsp vanilla extract or vanilla bean paste
  • 3 large eggs, room temperature
  • 13/4 tbsp baking powder
  • 1/3 cup buttermilk
  • 2 tbsp Greek yogurt or sour cream, room temperature
  • 3/4 cup unsalted butter, softened
  • 2 tbsp freshly grated lemon zest- Pinch of salt
  • 1 cup white chocolate chips
Roasted Strawberries
  • 1 cup fresh strawberries,hulled and sliced
  • 1 cup granulated sugar
  • 1 teaspoon freshly squeezed lemon juice

Method
 

Roasted Strawberries:
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine sliced strawberries, granulated sugar, anda splash of lemon juice.
  3. Spread this mixture evenly on a baking sheet lined with parchment paper.
  4. Roast the strawberries in the preheated oven for 20-25 minutes, or until they are tender and lightly caramelized.
  5. Allow the roasted strawberries to cool completely, allowing their flavors to deepen.
Strawberry Loaf Cake:
  1. Begin by preheating your oven to 350°F (180°C) and lining a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt, setting them aside.
  3. In a larger bowl, blend sugar with lemon zest, using your fingers to release the fragrant citrus aroma. Add the eggs and beat with an electric mixer for about 3 minutes, until the mixture turns pale.
  4. Incorporate the butter and continue beating for an additional 3-4minutes until smooth. Add vanilla bean paste, and then stir in the buttermilk and Greek yogurt or sour cream, creating a rich mixture.
  5. Gradually fold in the flour mixture using a gentle spatula, mixing until just combined.
  6. Incorporate the white chocolate chips, stirring until just blended, being careful not to overmix.
  7. Pour one-third of the batter into the prepared loaf pan, smoothing the surface. Add a layer of roasted strawberries on top, followed by more batter. Repeat with another layer of roasted strawberries, then finish with the remaining batter, topping it with a sprinkle of roasted strawberries and chocolate.
  8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove from the oven and allow it to cool before slicing into this delightful treat.
